Escape with us to Sicily as we teach you a curious classic from the city of Ragusa. Hosted by Family Food Fight Contestants, Concetta Pluchinotta-Varone, Concetta shares one of her most unique family recipes with you that you might not have ever tried before!
WHAT YOU’LL DO:
In this unique and hands-on class, Concetta will share their family recipe for Ravioli di Ricotta alla Ragusa ~ a handmade Ravioli pasta filled with sweet Ricotta cheese and paired with a savoury tomato and pork based sauce! Once Concetta has enlightened you with a detailed demonstration, you will be guided step by step to making an egg pasta dough from scratch, mixing together the “aruci” or sweet Ricotta filling, before rolling out the dough, filling and shaping it into Ravioli. Concetta will then demonstrate how to make a rich Ragusa style sauce which you will then pair with your Ravioli. By the end of this class, you will have gained the confidence to throw out those packet pastas and sauces and try mastering your own at home, while also learning an interesting new handmade pasta recipe to add to your repertoire!

WHO WILL HOST THIS EVENT:
Your host for this experience will be Pastry Chef and Season 2 Family Food Fight Contestant Concetta Pluchinotta-Varone. Concetta, affectionately known also as ‘Jetta’, lives loud and proud, paying homage to her Sicilian heritage in all facets of her culinary work. She became a family-favourite after making her debut on Australia’s Family Food Fight alongside her mother Pina; showcasing her family’s humble, home-style Sicilian cuisine. Concetta has since formalised her passion for food in becoming a qualified Patisserie Chef, priding herself on creating imaginative, top quality desserts that incorporate old-school Sicilian flavours inspired by her mother’s cooking.
Concetta can often be found at almost every Italian food festival in Australia! A passionate and lively member of Melbourne’s Italian food scene, Concetta believes in supporting small and local business. Concetta continues to pay homage to her heritage through her latest venture, Cannoli Canteen, specialising in authentic Sicilian cannoli, crostolli and cakes.
